This bacon and leek potato gratin layers thinly sliced potatoes with golden bacon and softened leeks, then bakes them in a creamy Dijon sauce beneath a generous cheese topping. The result is a comforting potato bake with tender layers, smoky flavour and a deeply golden top.
Streaky bacon brings richness to the dish, and cooking the leeks in the rendered bacon fat carries that flavour through every layer. It serves six and makes a generous side for a family dinner or Sunday roast.

Ingredients

- 200 g streaky bacon, chopped
- 2 leeks, thinly sliced
- 1 kg potatoes, thinly sliced
- 2 garlic cloves, crushed
- 300 mL thickened cream
- 150 mL milk
- 100 g grated Gruyère or tasty cheese
- 1 tsp Dijon mustard
- Salt and pepper
- Fresh thyme
Method
- Heat oven to 180°C. Fry bacon in a large pan until golden. Remove and set aside. Add leeks to the bacon fat and cook for 5 minutes until soft. Add garlic and cook for 30 seconds.
- Mix cream, milk and Dijon. Season generously with salt and pepper.
- Layer half the potatoes in a greased baking dish. Scatter over half the leek and bacon. Repeat with remaining potatoes, leek and bacon.
- Pour over the cream mixture and top with cheese and thyme.
- Cover with foil and bake for 45 minutes. Remove foil and bake for another 25–30 minutes until deeply golden and the potatoes are tender.

How to Serve
Bring the gratin to the table in its baking dish and serve alongside roast meat or a simple green salad. Let it stand briefly after baking so the creamy layers settle and are easier to spoon onto plates.
Butcher's Tip
Keep the fat from frying the streaky bacon in the pan and use it to soften the leeks, as directed. It carries the bacon flavour through the bake. Slice the potatoes evenly and check the centre with a small knife before serving: it should slide through the layers easily.
