Ingredients
- 500 g diced chuck steak, cut into large chunks
- 1 brown onion, roughly chopped
- 3 cloves garlic
- 3 cm piece ginger
- 2 cm piece galangal
- 1 red chilli
- 1 stalk lemongrass, bruised
- 1 tsp ground turmeric
- ½ tsp ground cinnamon
- 1 star anise
- 2 kaffir lime leaves, or zest of ½ lime
- 400 ml coconut milk
- â…“ cup beef stock
- 1 tbsp soy sauce or fish sauce
- 1 tbsp brown sugar
- 2 tbsp The Spice People Malay Rendang Spice
- Oil, for frying
- Salt, to taste
- Steamed jasmine rice and roti bread, to serve

Method
- Blend the onion, garlic, ginger, galangal and chilli into a rough paste.
- Heat oil in a heavy pot and fry the paste until deep golden and fragrant.
- Add the diced chuck steak and brown well.
- Stir through the turmeric, cinnamon, star anise and The Spice People Malay Rendang Spice.
- Add the coconut milk, beef stock, lemongrass and kaffir lime leaves or lime zest.
- Season with soy sauce or fish sauce, brown sugar and salt.
- Simmer over very low heat, uncovered, for 2–2½ hours. Stir occasionally until the beef is tender and the sauce is thick and glossy.
- Remove the lemongrass and whole star anise before serving. Remove the lime leaves if used and adjust the seasoning to taste.
- Serve with steamed jasmine rice and roti bread.

Butcher’s Tip
Chuck steak suits a long, gentle cook. Judge this rendang by both the beef and the sauce: the meat should be tender and the sauce reduced to a thick coating. Stir carefully as it thickens so it does not catch on the bottom of the pot.
