Spiced Chuck Steak Rice Pilaf
Serves: 4
Prep time: 15 minutes
Cook time: 45 minutes
Ingredients
- 500 g chuck steak from The Lucky Pig, diced
- 1 pack Basque Indian Pilau Rice
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups beef stock (Cape Grim stock, available in store)
- 2 tbsp olive oil
- Salt and pepper
- Fresh herbs to serve
- Herby yoghurt dressing to serve
Method
- Preheat oven to 180°C.
- Heat olive oil in a pot and brown the diced chuck steak. Remove and set aside.
- In the same pot, cook onion and garlic for 3–4 minutes.
- Add pilaf rice and toast lightly for 1 minute.
- Return beef to the pot and add beef stock.
- Cover with a lid and bake for 45 minutes until the beef is tender and rice is cooked through.
- Rest for 5 minutes, fluff with a fork and garnish with herbs.

Butcher’s tip
Take the time to properly brown the chuck before it goes in the oven. That colour builds the base flavour of the entire dish.
