Lamb Rogan Josh | A Rich Slow Cooked Lamb Curry
Comfort food season is here, and this Lamb Rogan Josh is the kind of meal that’s worth slowing down for. Tender slow-cooked lamb simmered in a rich tomato curry sauce, finished with yoghurt for a smooth and creamy finish.

Using quality diced lamb shoulder gives this curry incredible flavour and texture as it slowly breaks down during cooking.

Ingredients

  • 500g diced lamb shoulder
  • 1 onion, sliced
  • 2 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp Rogan Josh curry paste
  • 1 cup tomato passata
  • 1 cup yoghurt
  • Pappadums to serve
  • Rice to serve

Method

Heat a large pot or deep pan over medium-high heat. Add the diced lamb and cook until browned all over, allowing it to develop some colour. Remove the lamb from the pan and set aside.

In the same pan, add the sliced onion and cook until softened. Add the garlic and ginger, cooking for another minute until fragrant.

Stir in the Rogan Josh curry paste and cook for a minute or two to bring out the flavours. Pour in the tomato passata, stirring to combine, and let it cook for around 5 minutes to thicken slightly.

Return the lamb to the pan, stirring to coat it in the sauce. Bring to a gentle simmer, then reduce the heat to low, cover, and cook for 1.5 hours, or until the lamb is tender.

Stir occasionally and add a splash of water if needed to keep the sauce from becoming too thick.

Once the lamb is cooked and tender, remove the pan from the heat and stir through the yoghurt until the sauce is smooth and creamy.

Serve the lamb with rice and pappadums on the side.
