🥙 One-Tray Lamb Koftas with Roasted Veg & Tzatziki

Looking for a quick, no-fuss dinner that still feels restaurant-worthy? This one-tray lamb kofta recipe ticks every box — juicy, spiced lamb, caramelised veg, and creamy homemade tzatziki, all ready in under 45 minutes. Perfect for busy weeknights or casual weekend dinners.


Made with our premium lamb mince from The Lucky Pig Butchery, this dish is bursting with fresh Middle Eastern flavour and easy-to-prep ingredients that deliver big results with minimal cleanup.

 


 

 

Ingredients

 


For the koftas:

 

  • 500 g lamb mince

  • 1 small brown onion, finely diced

  • 2 garlic cloves, crushed

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp ground sumac

  • 2 large tomatoes, cut into wedges

  • 1 red onion, thinly sliced

  • Olive oil

  • Salt & pepper

 


For the homemade tzatziki:

 

  • 1 cup Greek yoghurt

  • ½ cucumber, grated and squeezed to remove excess water

  • 1 garlic clove, finely grated

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • Salt & pepper

 


To serve:

 

  • Flatbreads

  • Fresh parsley or mint (optional)

 

 


 

 

Method

 

 

  1. In a large bowl, mix lamb mince, grated onion, garlic, cumin, paprika, sumac, salt and pepper.

  2. Shape into kofta-style logs by pressing flat and cutting lengthways.

  3. Place koftas on a lined baking tray. Scatter tomato wedges and sliced red onion around them.

  4. Drizzle everything with olive oil and season.

  5. Roast at 200 °C for 20 minutes, until koftas are cooked and tomatoes are soft and caramelised.

  6. Meanwhile, make the tzatziki by mixing yoghurt, cucumber, garlic, lemon juice and olive oil in a bowl. Season with salt and pepper.

  7. Warm flatbreads and fill with koftas, roasted tomato and onion.

  8. Top generously with homemade tzatziki and scatter with herbs.

 

 


 

 

Serving suggestion

 


Serve these koftas straight from the tray with a side of lemon wedges or a fresh green salad. Great for family dinners, entertaining, or prepping weekday lunches.
