Ingredients

  • 1 large pizza base
  • 3 tbsp tomato passata (or pizza sauce)
  • 100 g Lucky Pig Gold Medal Smoked Chicken, sliced or torn
  • ½ red capsicum, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup black olives, pitted
  • 150 g fresh mozzarella, torn into chunks
  • Chilli oil, for drizzling
  • Fresh herbs (basil, parsley or oregano), to garnish
  • Salt & black pepper

Method

  1. Preheat oven to 220°C (fan-forced) and place a baking tray or pizza stone inside to heat up.
  2. Spread the passata evenly over the pizza base and season lightly with salt and pepper.
  3. Top with smoked chicken, capsicum, onion, and olives. Dot mozzarella evenly over the top.
  4. Transfer to the hot tray or stone and bake for 12–15 minutes, until the base is crisp and the cheese is golden.
  5. Remove from the oven, drizzle lightly with chilli oil, scatter with herbs, and slice to serve.
