Ingredients
- 1 large pizza base
- 3 tbsp tomato passata (or pizza sauce)
- 100 g Lucky Pig Gold Medal Smoked Chicken, sliced or torn
- ½ red capsicum, thinly sliced
- ½ red onion, thinly sliced
- ¼ cup black olives, pitted
- 150 g fresh mozzarella, torn into chunks
- Chilli oil, for drizzling
- Fresh herbs (basil, parsley or oregano), to garnish
- Salt & black pepper

Method
- Preheat oven to 220°C (fan-forced) and place a baking tray or pizza stone inside to heat up.
- Spread the passata evenly over the pizza base and season lightly with salt and pepper.
- Top with smoked chicken, capsicum, onion, and olives. Dot mozzarella evenly over the top.
- Transfer to the hot tray or stone and bake for 12–15 minutes, until the base is crisp and the cheese is golden.
- Remove from the oven, drizzle lightly with chilli oil, scatter with herbs, and slice to serve.

- Try a different base — wholemeal, sourdough or gluten-free work well.
- Boost the veggies — add mushrooms, spinach or zucchini.
- Add extra heat — sliced jalapeños or extra chilli oil for spice lovers.
