Sticky Apple & Chicken Skewers with Crisp Slaw

Sweet, smoky and just the right amount of tang — these Sticky Apple & Chicken Skewers are a simple weeknight cook that hits all the right notes. Tender Bannockburn free-range chicken thighs, caramelised apples, and a bright crunchy slaw make this one an easy crowd-pleaser.


Perfect for the grill, barbecue or even the frying pan — and yes, they taste as good as they look.

 


 

 

🍏 Ingredients

 


Serves: 4 | Prep time: 20 mins | Cook time: 12 mins


Skewers

 

  • 600 g chicken thighs, cut into chunks

  • 2 yellow apples, cut into wedges

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 1 tbsp Dijon mustard

 


Slaw

 

  • ½ small red cabbage, shredded

  • 1 yellow apple, grated

  • 2 spring onions, sliced

  • ¼ cup mayonnaise

  • Salt & pepper, to taste

 

 


 

 

🔥 Method

 


1️⃣ Marinate the chicken – Whisk olive oil, honey and mustard. Toss chicken to coat, then thread onto skewers, alternating with apple wedges.

2️⃣ Grill – Cook on a hot barbecue or grill for 10–12 minutes, turning until golden and cooked through.

3️⃣ Make the slaw – Combine cabbage, apple, spring onion and mayonnaise. Season well.

4️⃣ Serve – Pile the skewers onto a platter with the crisp apple slaw on the side.


💡 Tip: Brush the skewers with a little extra honey in the final minute for that glossy finish.
