Lamb Roast with Veggies & Green Sauce

A flavour-packed roast dinner, ready in under an hour.

Perfectly tender lamb cannon, crispy roast potatoes, vibrant Brussels sprouts and a zesty homemade salsa verde to tie it all together. This one’s for the herb-lovers.

🛒 Ingredients

 


 

For the lamb and vegetables:

 

 

  • 500g lamb cannon (available in-store at The Lucky Pig)

  • 2 white potatoes, diced

  • 400g Brussels sprouts, halved

  • 2 tbsp neutral oil (e.g. vegetable or grapeseed)

  • Salt & pepper

  • Herbs & spices: rosemary and dried mint

 


 

For the salsa verde (green sauce):

 

 

  • 2 cloves garlic

  • A handful of fresh parsley

  • A handful of fresh mint

  • Zest and juice of 1 lemon

  • Olive oil (about ⅓ cup, adjust as needed)

  • Salt & pepper, to taste

👨🍳 Method

 

 

  1. Preheat your oven to 200°C (fan forced).

  2. Prep the vegetables: Toss the diced potatoes and halved Brussels sprouts in oil, salt, pepper, rosemary and mint. Spread them evenly on a lined roasting tray.

  3. Season the lamb: Rub lamb cannon with salt, pepper, a touch of rosemary and a sprinkle of dried mint. Place it directly on the tray with the vegetables.

  4. Roast for 20–25 minutes for medium rare, or until the lamb is cooked to your liking. (Adjust time if your lamb is thicker or thinner.)

  5. Rest the lamb: Remove from the oven and let it rest for 10 minutes before slicing.

  6. Make the salsa verde: In a small food processor or blender, blitz garlic, parsley, mint, lemon zest, lemon juice, olive oil, salt and pepper until you get a smooth green sauce. Taste and adjust seasoning.

  7. Serve: Slice the lamb and serve it over the roasted veggies. Spoon over the fresh salsa verde and enjoy!

💡 Tips & Tricks

 

 

  • Don’t skip the resting time: It keeps the lamb juicy and tender.

  • Make it your own: Add carrots, red onion or pumpkin to the veggie tray.

  • No food processor? Finely chop everything and mix well — it’ll still be delicious.
