Introduction
These Cheeseburger Sausage Rolls bring together the best parts of a classic cheeseburger and the comfort of a golden, flaky sausage roll. A mix of beef mince and sausage mince makes the filling juicy and flavourful, while melted cheddar and tangy pickles on top give them that unmistakable cheeseburger bite. Served with a quick burger sauce, they’re perfect for footy finals, family dinners, or party platters.
Ingredients
For the sausage rolls:

250g beef mince

250g sausage mince

½ onion, diced
-
A handful of chopped parsley

2 cloves garlic, diced

½ cup panko breadcrumbs

1 egg (for mixture)

1 tsp paprika
-
1 tsp salt
-
3 sheets puff pastry
-
1 egg (for egg wash)

100g cheddar cheese, cut into thin squares (for topping)

Sliced dill pickles (for topping)
For the burger sauce:

3 tbsp mayonnaise

2 tbsp chipotle mayonnaise

1 tbsp finely diced onion
-
1 tbsp finely diced pickles

¼ tsp paprika
-
¼ tsp garlic powder

A sprinkle of chopped parsley

1 tsp lemon juice
Method

Preheat the oven to 200°C. Line a tray with baking paper.

In a large bowl, combine beef mince, sausage mince, onion, parsley, garlic, breadcrumbs, paprika, salt, and egg. Mix until well combined.

Cut pastry sheets in half. Place the filling in a log along one edge, roll tightly, and cut into smaller sausage rolls.

Arrange rolls on the tray, brush with egg wash, and bake for 20–25 minutes.

Once nearly cooked, top each roll with a slice of pickle and cheddar. Secure with a toothpick if needed, then return to the oven until the cheese has melted.

For the burger sauce: mix all sauce ingredients together in a small bowl.

Serve sausage rolls hot with burger sauce for dipping.
