Method

  1. Preheat the oven to 200°C. Line a tray with baking paper.
  2. In a large bowl, combine beef mince, sausage mince, onion, parsley, garlic, breadcrumbs, paprika, salt, and egg. Mix until well combined.
  3. Cut pastry sheets in half. Place the filling in a log along one edge, roll tightly, and cut into smaller sausage rolls.
  4. Arrange rolls on the tray, brush with egg wash, and bake for 20–25 minutes.
  5. Once the rolls are nearly cooked, top each with pickle and cheddar. Return to the oven until the cheese has melted and the mince filling is cooked through.
  6. For the burger sauce: mix all sauce ingredients together in a small bowl.
  7. Serve sausage rolls hot with burger sauce for dipping.

Butcher’s Tip

Keep the filling quantities consistent when cutting the rolls so they bake evenly. The topping goes on near the end; check that the mince filling is cooked through before serving.

How to Serve

Serve hot with the burger sauce for dipping. Add chips and a fresh salad for a meal, or arrange on a sharing platter.
