Ingredients
- 300 g smoked chicken breast, diced
- 1 Granny Smith apple, diced
- 1 stick celery, diced
- 150 g cheddar cheese, diced
- ÂĽ cup walnuts, chopped
- A handful of fresh dill, chopped
- 2 tbsp mayonnaise
- ÂĽ cup raisins
- Salt and pepper, to taste
- 1 lemon wedge

Method
- Place the diced smoked chicken, apple, celery and cheddar in a large bowl.
- Add the chopped walnuts, dill and raisins.
- Add the mayonnaise and toss gently until the ingredients are evenly coated.
- Season with salt and pepper, then squeeze over the lemon wedge to taste. Serve.

Use smoked chicken breast for this recipe: it brings the smoky flavour without a separate cooking step. Cut the chicken, apple and cheddar into similar-sized pieces so each forkful has a good mix.
