Loaded Chicken Fried Rice

Ingredients:
- Spring Onions:130 ml, finely chopped
- Basmati Rice: 600 g, cooked and cooled
- Chicken Breast: 1,640 g, cut into bite-sized pieces
- Sesame Oil: 10 ml
- Red Capsicum: 500 g, diced
- Australian Baby Peas: 500 g
- Eggs (Keans): 4, beaten
- Crispy Chilli Oil (Six Eyed Scorpion): 100 g
- Corn Kernels: 420 g, drained
- Carrot: 400 g, peeled and diced

Instructions:
1. Prepare the Ingredients:
- Cook the basmati rice according to the package instructions. Spread it out on a tray to cool completely.
- Cut the chicken breast into bite-sized pieces.
- Dice the red capsicum and peel and dice the carrot.
- Drain the corn kernels.

2. Cook the Chicken:
- Heat a large frying pan or wok over medium-high heat.
- Add the sesame oil and let it heat up.
- Add the chicken breast pieces and stir-fry until fully cooked. Remove the chicken from the pan and set aside.

3. Cook the Vegetables:
- In the same pan, add a bit more sesame oil if needed.
- Add the diced carrots and stir-fry for about 2-3 minutes.
- Add the red capsicum, corn kernels, and baby peas. Stir-fry for another 2-3 minutes until the vegetables are tender.

4. Scramble the Eggs:
- Push the vegetables to the side of the pan.
- Pour the beaten eggs into the empty side of the pan and scramble until fully cooked.
- Mix the scrambled eggs with the vegetables.

5. Combine Everything:
- Add the cooked and cooled rice to the pan.
- Return the cooked chicken to the pan.
- Pour in the crispy chilli oil and stir everything together until well combined and heated through.

6. Finish with Spring Onions:
- Add the finely chopped spring onions and mix well.
- Cook for another 2 minutes, ensuring everything is evenly heated.

7. Serve:
- Serve the fried rice hot, with more Six Eyed Scorpion Chilli Oil on top, because, flavour matters.
