Harissa Lamb Meatballs with Herby Quinoa & Yoghurt

This is a fresh, fast way to cook with lamb mince. Spiced meatballs with a bit of heat, balanced by herby quinoa and cool yoghurt. It’s simple, packed with flavour, and built for easy midweek meals that still feel like you’ve put some effort in.

Ingredients

  • 500g lamb mince
  • 1 tbsp harissa
  • 1 garlic clove
  • 1 egg
  • ½ cup breadcrumbs
  • ÂĽ cup cranberries or sultanas
  • 1 cup cooked quinoa
  • Handful parsley & mint, chopped
  • 1 cup Greek yoghurt
  • Lemon zest + juice

Method

  1. In a large bowl, combine the lamb mince, harissa, crushed garlic, egg, and breadcrumbs. Mix until well combined.
  2. Roll into evenly sized meatballs and set aside on a tray.
  3. Heat a pan over medium heat with a little oil. Add the meatballs and cook, turning occasionally, until browned all over and cooked through.

  1. While the meatballs cook, prepare the quinoa. Toss the cooked quinoa with herbs, cranberries or sultanas, lemon zest, and a squeeze of lemon juice.
  2. In a separate bowl, mix the Greek yoghurt with a little extra herbs and lemon juice.
  3. To serve, spoon the quinoa onto plates, top with the meatballs, and finish with a generous dollop of yoghurt.
