Air Fryer Sumac Chicken Thighs with Fresh Parsley Salad

They're juicy, forgiving and packed with flavour, making them one of the easiest cuts to cook well at home. Pair them with the bright citrus notes of sumac and a fresh parsley salad, and you've got an easy weeknight dinner that's on the table in around 30 minutes without feeling like another boring chicken recipe.

Using premium Free-Range Chicken Thigh Fillets, this recipe delivers beautifully caramelised chicken with tender, juicy meat every time. Whether you're cooking for two or feeding the family, it's a recipe you'll come back to again and again.

Ingredients

Chicken

  • 4 Free-Range Chicken Thigh Fillets (about 500g total)
  • 2 tbsp olive oil
  • 1½ tbsp sumac
  • 1 tsp paprika
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and freshly cracked black pepper
  • Juice of 1 lemon
  • Extra lemon wedges to serve

Fresh Parsley Salad

  • 1 large bunch flat-leaf parsley, roughly chopped
  • ½ cucumber, finely diced
  • ½ red onion, finely sliced
  • ¼ cup toasted hazelnuts
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp sumac
  • Salt and freshly cracked black pepper

Method

  1. Combine the olive oil, sumac, paprika, garlic, oregano, lemon juice, salt and pepper. Coat the chicken thighs thoroughly and leave to marinate for at least 10–15 minutes while you prepare the salad.
  2. Preheat your air fryer to 180°C.
  3. Arrange the chicken thighs in a single layer and cook for 15–20 minutes, turning halfway through, until golden brown and the thickest part reaches an internal temperature of 75°C.
  4. Meanwhile, combine the parsley, cucumber, toasted hazelnuts and red onion in a bowl.
  5. Season with the remaining sumac, salt and pepper, then dress with the olive oil and lemon juice. Toss well to keep everything bright, fresh and crunchy.
  6. Allow the chicken to rest for a few minutes before serving whole or sliced alongside the salad. Spoon over any resting juices and finish with extra lemon wedges.

How to Serve

This recipe is delicious exactly as it is, but it's equally at home with warm flatbread, roasted chat potatoes or steamed rice if you're after a heartier meal.

A spoonful of Greek yoghurt also pairs beautifully with the citrusy sumac, creating a fresh Mediterranean-inspired dinner that's perfect for warm evenings or easy entertaining.
