Chicken Chorizo Chickpea Tray Bake

If you want an easy dinner that still feels like a proper meal, this chicken chorizo chickpea tray bake is hard to beat.

Ingredients

  • 6 chicken thighs from The Lucky Pig
  • 150 g chorizo, sliced
  • 1 tin chickpeas, drained
  • 1 red capsicum, sliced
  • 1 red onion, cut into wedges
  • 3 cloves garlic, sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and freshly cracked black pepper
  • Lemon wedges
  • Fresh parsley to serve

Method

  1. Preheat oven to 200°C.
  2. Place the chicken, chorizo, chickpeas, capsicum, onion and garlic on a large tray.
  3. Drizzle with olive oil and sprinkle with smoked paprika, salt and cracked pepper.
  4. Toss gently so everything is coated evenly.
  5. Roast for 35 to 40 minutes, until the chicken is golden and cooked through.
  6. Finish with lemon juice and fresh parsley before serving.
