Quick & Easy Greek-Style Chicken Tray Bake

This quick and easy Greek-style chicken tray bake is a simple one-tray dinner loaded with lemon, oregano, olives, feta and fresh tomatoes.

The chicken chops roast on top of the potatoes and vegetables, allowing their flavourful juices to run through the tray as everything cooks. The result is golden chicken, tender potatoes and plenty of bright Mediterranean flavour with very little washing up.

Ingredients

  • 4 chicken chops
  • 500 g potatoes, halved
  • ½ red onion, sliced
  • 2 cloves garlic, crushed
  • ½ lemon, sliced, plus the juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp paprika
  • 50 g feta, crumbled
  • ½ cup olives
  • ½ cup cherry tomatoes, chopped
  • Fresh parsley, chopped
  • Salt and freshly cracked black pepper

Method

  1. Preheat the oven to 200°C.
  2. Place the potatoes, red onion, garlic, olives, oregano and paprika into a large roasting tray.
  3. Add the olive oil, lemon slices and lemon juice. Season with salt and freshly cracked black pepper, then toss until everything is evenly coated.
  4. Nestle the chicken chops on top of the potatoes and vegetables, leaving the skin exposed so it can become golden and crisp.
  5. Roast for 40–45 minutes, or until the chicken is golden, the potatoes are tender and the chicken is cooked through.

  1. Remove the tray from the oven and finish with the crumbled feta, chopped cherry tomatoes and fresh parsley.
  2. Serve immediately with the lemony tray juices spooned over the chicken and potatoes.

How to Serve

This Greek-style chicken tray bake is a complete meal on its own, with chicken, potatoes and vegetables all cooked together.

For a larger meal, serve it with warm flatbread, tzatziki or a simple Greek salad. Make sure to spoon the lemony roasting juices from the bottom of the tray over each serving.

Butcher’s Tip

Chicken chops are chicken thighs with the bone left in. The bone helps protect the meat during roasting, while the skin becomes golden and crisp on top.

For the best browning, place the chicken skin-side up and avoid covering it with the potatoes or vegetables. Patting the skin dry before seasoning will also help it crisp in the oven.
