This sausage, fennel and couscous recipe is a fast, flavour-packed dinner that comes together in under 30 minutes.
Sweet caramelised fennel pairs beautifully with juicy sausages and fluffy herbed couscous, finished with a simple lemon butter. Itβs an easy weeknight meal that delivers big flavour with minimal effort.

Ingredients
- 4 The Lucky Pig Leaning Tower sausages
- 1 fennel bulb, sliced
- 1 tsp fennel seeds
- 1 cup couscous
- 2 cups boiling water
- 2β3 tbsp butter
- 1 tsp red peppercorns, crushed
- 1 tsp lemon juice
- Salt and freshly cracked black pepper
- 1β2 tbsp chopped fresh parsley
Method
- Pour 2 cups of boiling water over 1 cup of couscous in a bowl. Cover and allow it to stand for 5 minutes until the water is absorbed, then fluff the couscous with a fork.
- Stir through chopped fresh parsley and season lightly with salt and pepper.
- Heat 2 tablespoons of butter in a frying pan over medium heat.
- Add the sliced fennel and sausages and cook until the fennel is caramelised and the sausages are golden and cooked through.
- Remove the sausages from the pan and add the remaining butter.
- Stir in crushed red peppercorns, fennel seeds and lemon juice to create a simple butter sauce.
- Fold the cooked fennel and butter sauce through the couscous.
- Slice the sausages, spoon the couscous onto a serving plate and top with the sliced sausages.
- Serve immediately.
