This fragrant coconut poached chicken is an easy way to cook juicy chicken breast that shreds perfectly for wraps, salads, noodles or rice bowls.
Poaching chicken in coconut milk with ginger, garlic and kaffir lime keeps the meat tender while gently infusing flavour. Itβs a simple technique that produces incredibly versatile shredded chicken for quick meals throughout the week.

Ingredients
- 600g The Lucky Pig chicken breast fillets
- 400 ml coconut milk
- 1 cup water or chicken stock
- 2 garlic cloves, lightly crushed
- 2 cm piece ginger, sliced
- 1 kaffir lime leaf
- 1 tsp salt
- Β½ tsp freshly cracked black pepper
Method
- Place the chicken in a wide saucepan in a single layer.
- Add coconut milk, water or stock, garlic, ginger, lime leaf, salt and pepper. The liquid should just cover the chicken.
- Bring to a gentle simmer over medium heat, then reduce heat to low. Cover and poach for 15β20 minutes, or until the chicken is just cooked through.
- Remove the chicken from the liquid and rest for 5 minutes.
- Shred the chicken using two forks.
- Strain and reserve the poaching liquid if desired β it makes an excellent base for soups, ramen or noodle broths.
