Sausage Cassoulet (Easy Irish Pork Sausage & White Bean Bake)

If you want comfort food without the all-day commitment, this sausage cassoulet is the move. Smoky bacon, white beans, tomatoes and thyme bubble away underneath, while our Irish Pork Sausages roast on top until browned and juicy. Serve it straight from the dish with crusty bread and let the oven do the heavy lifting.

Ingredients

Ingredients for sausage cassoulet including Irish pork sausages, bacon, white beans, tomatoes, onion, thyme and paprika.

Method

  1. Preheat oven to 180°C.
  2. In a pan, sauté the onion and chopped bacon until lightly golden.
  3. Stir in the beans, chopped tomatoes, tomato paste, stock, thyme and paprika.
  4. Season with salt and pepper.
  5. Transfer the mixture to a baking dish.
  6. Nestle the sausages on top.
  7. Bake uncovered for 30 minutes, or until sausages are cooked through and browned.
  8. Serve hot with crusty bread.
Finished sausage cassoulet served hot, with browned Irish pork sausages on top of a rich tomato and white bean base.
