  • Lean and naturally tender
  • Works well when sliced correctly

If you want a safer option with more margin for error, go the scotch fillet. If you prefer leaner pork, fillet works — but it needs a bit more care.

How to slice pork for stir fry

This is where most people go wrong.

Take a look at the direction the muscle fibres run through the meat — that’s called the grain.

For stir fry, you want to slice across the grain, not along it.

  • Use a sharp knife
  • Slice thin and evenly
  • Cut perpendicular to the grain, not parallel

This shortens the muscle fibres, making the pork far more tender to eat.

Why slicing against the grain matters

When you slice with the grain, you leave long muscle fibres intact. That’s what creates that chewy, stringy texture.

Slicing against the grain breaks those fibres down into shorter lengths, which makes each bite softer and easier to chew.
