Ingredients

 

 

  • 2 chicken thigh fillets

  • Olive oil

  • Salt and pepper

  • 1 cup cooked rice

  • ½ tomato, diced

  • ½ cucumber, diced

  • ½ avocado, sliced

  • ¼ Spanish onion, finely sliced

  • Handful of mixed herbs (mint, coriander, parsley)

  • ½ lime, cut into wedges

  • 1 small green chilli, sliced

Method

 

 

  1. Prepare the chicken

    Marinate chicken with olive oil, salt, and pepper — or use your favourite seasoning rub.

    Pan-fry until golden and cooked through, then slice.
