Using our Portuguese-style Peri Peri chicken, roasting it flat for even cooking and crispy skin, then finishing it with a fresh mango salad creates the perfect balance of heat, citrus and sweetness. It’s an ideal warm-weather meal and one we make all the time in our own kitchens.

Ingredients
For the chicken
For the mango salad

1 mango, diced

1 red onion, finely sliced

1 tomato, diced
-
A handful of torn basil
Salad dressing

2 tbsp honey
-
Juice of ¼ lemon

½ tsp salt
Method

Preheat your oven to 200°C (fan-forced).

Place the spatchcocked peri peri chicken into a roasting dish, skin-side up.

Roast for around 1 hour, or until the skin is crispy and golden and the chicken is cooked through.

While the chicken cooks, combine the mango, red onion, tomato and basil in a bowl.

Whisk together the honey, lemon juice and salt, then pour over the salad and gently mix.

Once the chicken is cooked, serve it straight from the baking dish and spoon the mango salad over the top.

The gentle heat from the chicken will slightly warm the salad, enhancing the aromatics and giving it a subtle sweetness.
