These Lil’ Spicy BBQ Hawaiian Chicken Skewers are quick to prep, easy to cook, and perfect for the BBQ or grill. Juicy chicken thigh, sweet pineapple, a smoky BBQ glaze with just enough kick, and a fresh salsa to finish it off.

Why chicken thigh works best here
Chicken thigh stays juicy on the BBQ, even if you cook it a touch longer. It takes on marinades beautifully and gives you that proper char without drying out.
For this recipe, we’re using Chicken Thigh Fillets (2ea) — trimmed, clean, and ready to go.
Ingredients (Serves 8)
Skewers
- 600 g chicken thigh fillets, cut into large chunks
- Fresh pineapple, cut into chunks
- ½ cup Lane’s BBQ Lil Spicy Sauce
- 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1–2 tbsp honey (optional, for extra stickiness)
- Salt & cracked black pepper
- Fresh coriander
Fresh salsa
- Yellow cherry tomatoes, chopped
- Jalapeño, finely sliced
- Red onion, finely diced
- Fresh coriander
- Lime juice
- Pinch of salt
Method
- Marinate the chicken. In a large bowl, combine the chicken, BBQ sauce, olive oil, garlic, honey (if using), seasoning and coriander. Toss well and marinate for at least 20 minutes.
- Assemble the skewers. Thread chicken and pineapple onto skewers, alternating pieces.
- Cook. Grill or BBQ over medium-high heat for 15–20 minutes, turning regularly and basting with extra sauce until cooked through and lightly charred.
- Finish & serve. Spoon over the fresh salsa, add a squeeze of lime, and finish with extra coriander.

Cooking tips from the butcher
- Medium-high heat gives you caramelisation without burning the sauce
- Chicken thigh is forgiving, but rest skewers for 2–3 minutes before serving
- Works just as well under the grill if the weather doesn’t cooperate
