Ingredients
- 150–200g The Lucky Pig jalapeño kabana, sliced
- 4 large eggs
- 1 fresh jalapeño, sliced
- 2 tbsp milk or cream
- 1 tbsp olive oil or butter
- Salt & pepper
- Optional: cheese, spring onion, coriander or chives

Method
- Heat olive oil or butter in a non-stick frying pan over medium heat. Add sliced jalapeño kabana and cook for 2–3 minutes until lightly golden and fragrant.
- Add sliced jalapeño and cook briefly.
- Whisk eggs with milk, salt and pepper, then pour into the pan, tilting to spread evenly.
- Cook gently until the edges begin to set.
- Scatter over optional extras if using.
- Continue cooking until just set but still soft in the centre.
- Fold the omelette, slide onto a plate and serve immediately.
