Ingredients
- 2 butterflied The Lucky Pig chicken breast fillets
- ½ cup hazelnuts, toasted
- ¼ cup pepitas, toasted
- 1 tsp cumin seeds, toasted
- 1 tsp coriander seeds, toasted
- Salt & pepper
- ½ cup plain flour
- 2 eggs, beaten
- Oil, for frying
- 150 g mozzarella, grated or sliced
- 2 tbsp pesto
Method
- Blitz hazelnuts, pepitas, cumin, coriander, salt and pepper into a coarse crumb.
- Coat chicken in flour, then egg, then the nut crumb.
- Shallow-fry in hot oil until golden and cooked through.
- In a separate pan, gently melt the mozzarella.
- Stir pesto through the melted cheese.
- Spoon generously over schnitzels and serve immediately.
