Ingredients

  • 2 butterflied The Lucky Pig chicken breast fillets
  • ½ cup hazelnuts, toasted
  • ¼ cup pepitas, toasted
  • 1 tsp cumin seeds, toasted
  • 1 tsp coriander seeds, toasted
  • Salt & pepper
  • ½ cup plain flour
  • 2 eggs, beaten
  • Oil, for frying
  • 150 g mozzarella, grated or sliced
  • 2 tbsp pesto

Method

  1. Blitz hazelnuts, pepitas, cumin, coriander, salt and pepper into a coarse crumb.
  2. Coat chicken in flour, then egg, then the nut crumb.
  3. Shallow-fry in hot oil until golden and cooked through.
  4. In a separate pan, gently melt the mozzarella.
  5. Stir pesto through the melted cheese.
  6. Spoon generously over schnitzels and serve immediately.
