Crispy Bacon & Egg Rice Paper Scroll

A twist on the classic bacon and eggs — this crispy rice paper scroll is golden, cheesy and ridiculously satisfying. Perfect for breakfast, lunch or a late-night snack when you need something proper.

 


 

 

Ingredients

 

 

  • Lucky Pig short-cut bacon

  • 1 tbsp butter

  • 6 eggs4 for scrambling, 2 for egg wash

  • 4 rice paper sheets

  • Mozzarella, shredded

  • Parsley, chopped

  • Salt & pepper, to season

 

 


 

 

Method

 

 

  1. Cook the bacon in a pan until crisp, then set aside.

  2. Using the same pan, melt the butter and scramble 4 eggs. Season with salt and pepper.

  3. Once scrambled, mix in mozzarella while the eggs are still warm so it softens slightly.

  4. Whisk 2 eggs in a bowl to form an egg wash. Briefly dip each rice paper sheet until just softened.

  5. Lay the softened sheets on a board, crossing them over each other to form a long base.

  6. Add the bacon, scrambled eggs and mozzarella.

  7. Sprinkle with chopped parsley.

  8. Roll tightly into one long, thick roll, then gently shape it into a spiral.

  9. Place into the air fryer for 20 minutes — or until golden and crispy.

  10. Cut in half or into quarters, and serve hot.

Serving Ideas

 

 

  • Add chilli oil or sriracha before rolling for a spicy kick.
