From Basque With Love – Thai Jasmine Rice with Pineapple and Cashews
Cooking instructions: Heat 1 tablespoon of vegetable oil over medium heat, add 1 cup of rice and fry for 1 minute. Add 2 cups of water and cook for 15 to 20 minutes or until water has been absorbed. Add fish sauce to taste for a bit of extra flavour. Serve on its own or as an accompaniment to a stir fry, meat or fish. Seriously delicious mixed with prawns, calamari and mint.
