Silky Velvet Chicken Stir Fry

If you’ve ever wondered how takeaway stir fry chicken stays so soft and tender, this is it. The simple “velveting” step takes 10 minutes and makes chicken breast cook up silky instead of dry. This one is fast, punchy, and perfect for a proper weeknight feed.

Recipe details

  • Serves: 2–3
  • Prep time: 10 minutes (+ 10 minutes for velveting)
  • Cook time: 8–10 minutes

Ingredients

  • 2 The Lucky Pig chicken breasts, sliced thinly
  • 1 red onion, sliced
  • 1 small broccoli head
  • 1 red capsicum, sliced
  • 100 g mini corn
  • 1 tsp sesame seeds
  • 2–3 tbsp oyster sauce
  • 1/4 tsp bicarbonate of soda
  • 1–2 tbsp olive oil
  • Salt and freshly cracked black pepper

Method

  1. Place sliced chicken in a bowl and sprinkle with bicarbonate of soda.
  2. Gently toss to coat and set aside for 10 minutes to velvet the chicken.
  3. Heat oil in a wok or frying pan over medium-high heat.
  4. Add velveted chicken and stir-fry until lightly golden and just cooked through.
  5. Add red onion, capsicum and mini corn and stir-fry until slightly softened but still crisp.
  6. Add oyster sauce and toss to coat the chicken and vegetables evenly.
  7. Sprinkle with sesame seeds and season with salt and freshly cracked black pepper.
  8. Serve immediately.

Butcher’s tip

Don’t overcook chicken breast. Once it’s just cooked through, pull it off the heat and let the sauce do the rest. Thin slicing + hot pan + quick cook = tender every time.
