Sausage & Caramelised Onion Flatbread

Crispy flatbread, caramelised onions, browned sausage meat, melted mozzarella and creamy stracciatella. This is an easy way to turn a few good sausages into something completely different, and you can use whichever flavour from The Lucky Pig sausage range you feel like eating.

Prep time: 25 minutes
Cook time: 18 minutes


Ingredients

  • 1 store-bought flatbread
  • 4 Lucky Pig sausages of your choice, casings removed
  • 2 brown onions, sliced
  • 1 tbsp butter
  • 100 g mozzarella, grated
  • 200 g stracciatella
  • Olive oil, to finish

Method

  1. Caramelise the onions. Melt the butter in a pan over low heat. Add the sliced onions and cook slowly for around 20 minutes, stirring occasionally, until soft and golden.
  2. Cook the sausage meat. Remove the sausage meat from the casings. Cook in a separate pan over medium heat, breaking it apart with a spoon as it cooks, until browned and cooked through.
  3. Prepare the flatbread. Preheat the oven to 220°C and place the flatbread onto a lined baking tray.
  4. Add the toppings. Sprinkle the mozzarella evenly over the flatbread, then spread the caramelised onions and cooked sausage meat across the top.
  5. Bake. Bake for around 15 minutes, or until the edges of the flatbread are crisp, the mozzarella has melted and the toppings are hot.
  6. Finish with stracciatella. Spoon the stracciatella over the flatbread while it is still warm, allowing the creamy cheese to soften slightly into the hot toppings.
  7. Serve. Finish with a drizzle of olive oil, slice and serve immediately.

How to Serve

This flatbread is rich enough to work as a meal on its own, but a crisp green salad, rocket dressed with lemon and olive oil, or some simply roasted vegetables make an easy side. Cut it into smaller pieces and it also works well as a sharing plate or casual entertaining dish.

Butcher's Tip

Think of sausage meat as seasoned mince. Once you remove it from the casing, a good sausage becomes an easy flavour base for flatbreads, pasta, stuffing, meatballs and plenty more.
