Keep the crackling crisp by adding the miso and sweet-soy glaze to the sliced meat, rather than pouring it over the skin. This recipe uses a 1.5 kg rolled pork belly and combines a hot start with a slower roast.
Preparation and standing: 30 minutes
Roast: about 1 hour 55 minutes–2 hours 30 minutes
Rest: 15–20 minutes
Total: allow about 3 hours 20 minutes using the longer roasting time
Serves: 6
Ingredients
- 1.5 kg rolled pork belly
- 1 tbsp olive oil
- 1 tbsp flaky salt
Miso and sweet-soy glaze
- 2 tbsp white miso
- 2 tbsp sweet soy sauce
- 2 tbsp honey
- 1 tbsp brown sugar
- 1 tsp sesame oil
- 2 cm ginger, finely grated
- 1 garlic clove, finely grated
To serve
- 2 spring onions, finely sliced
- Sesame seeds

Method
- Remove the pork belly from the fridge 30 minutes before cooking. Pat the skin very dry, rub with olive oil and salt.
- Preheat oven to 240°C fan-forced.
- Place the pork on a rack over a roasting tray and roast for 25-30 minutes, or until the skin begins to blister and crackle.
- Reduce the oven to 160°C and continue roasting for approximately 1½-2 hours, depending on the size of the roll, until tender and cooked through.
- Meanwhile, combine all glaze ingredients in a small saucepan and simmer for 2-3 minutes until glossy.
- Once the pork is cooked, rest for 15-20 minutes.
- Slice into thick rounds and drizzle or brush the miso and sweet-soy glaze over the cut pork rather than the crackling, keeping that beautiful skin crisp.
- Finish with spring onion and sesame seeds.

Butcher’s Tip
Pat the skin thoroughly dry before salting. Spoon the glaze onto the cut meat after resting, keeping it off the crackling so the skin stays crisp.
How to Serve
