Make loaded nacho fries with crisp oven fries, taco-spiced beef mince and melted cheese. The trick is to reduce the beef sauce until thick and add the sour cream and fresh toppings at the last minute, so the fries keep their crunch.

Serves: 4–6 servings
Ingredients
- 500 g The Lucky Pig Beef Mince
- 750 g frozen French fries
- 1 tbsp olive oil
- 1 small brown onion, diced
- 2 tbsp taco seasoning
- 2 tbsp tomato paste
- ½ cup water
- 1½ cups grated tasty cheese
- ½ cup sour cream
- 1 avocado, diced
- 1 tomato, diced
- ½ red onion, finely diced
- Pickled jalapeños
- Fresh coriander
- Lime wedges

Method
- Cook the fries according to packet instructions until very crispy.
- Meanwhile, heat olive oil in a frying pan and cook the onion until softened. Add the beef mince and cook over high heat, breaking it apart, until browned.
- Add the taco seasoning and tomato paste and cook for another minute. Add the water and simmer until the beef is rich and saucy but not wet.
- Pile the fries onto a large ovenproof platter or tray. Spoon over the beef and scatter generously with cheese.
- Return to the hot oven at the temperature used for the fries for about 5 minutes, or until the cheese is melted and bubbling.
- Top with sour cream, avocado, tomato, red onion, jalapeños and coriander. Serve immediately with lime wedges.

Butcher’s Tip
Spread the fries out while they cook and reduce the beef sauce until it coats the mince. A wet sauce will soften the fries. Add cold toppings just before eating.
How to Serve
Bring the tray to the table and serve immediately with lime wedges. This works as a sharing meal for four to six.
