Crispy Pork Belly Popcorn Bites

This is one of those recipes that doesn’t last long once it hits the table. Crispy pork belly popcorn bites — crunchy on the outside, soft in the middle, and coated in a sticky, slightly spicy glaze.

It’s simple, it’s loud on flavour, and it hits that perfect middle ground between snack and full-blown indulgence. The kind of thing you cook once, then get asked for again the next weekend.

Why pork belly works for this

Pork belly is built for this kind of cooking. It’s got enough fat to stay juicy, but when you hit it with heat, it crisps up beautifully on the outside. Cut it small, fry it properly, and you get that contrast of crunch and softness in every bite.

The glaze finishes it off — sweet from the honey, heat from the gochujang, and just enough stickiness to coat everything without turning it soggy.

Crispy Pork Belly Popcorn Bites

Serves: 3–4 (as a snack or sharing plate)
Prep time: 10 minutes
Cook time: 10–12 minutes

Ingredients

  • 500 g pork belly from The Lucky Pig butcher, cut into small cubes
  • Salt and pepper
  • Oil for frying

Glaze

  • 2 tbsp honey
  • 1 tbsp gochujang
  • Sesame seeds

Method

  1. Season the pork belly cubes with salt and pepper.
  2. Heat oil to 180°C and fry the pork until crispy and golden, about 5–6 minutes.
  3. Remove and drain on paper towel.
  4. Mix honey and gochujang in a bowl.
  5. Toss the hot pork belly through the glaze until evenly coated.
  6. Finish with sesame seeds and serve immediately.

Butcher’s tip

Don’t overcrowd the pan. If the pork sits too tight, it steams instead of crisps. Give it space, keep the oil hot, and you’ll get that proper crunch.
