If you've got leftover bolognese sitting in the fridge, this might be the best thing you can do with it. Crispy golden bread, plenty of melted cheese and a generous layer of rich bolognese combine to create a toastie that's hard to beat.
It's quick, satisfying and a great way to stretch a batch of bolognese into another meal without feeling like you're eating the same thing twice.

Ingredients
- 1 cup leftover Butcher's Bolognese
- 4 slices thick-cut bread (sourdough or similar)
- 1 cup grated mozzarella or tasty cheese
- Butter, for spreading

Method
- Heat the bolognese until thick and not too saucy.
- Butter one side of each slice of bread.
- Place two slices butter-side down into a frying pan over medium heat.
- Top with cheese, a generous layer of bolognese, then another layer of cheese.
- Place the remaining slices of bread on top with the buttered side facing up.

- Cook over medium heat, pressing gently until golden underneath.
- Carefully flip and cook the second side until golden and the cheese has melted.
- Slice and serve immediately.
