Boxing Day Ham & Veggie Frittata

An easy way to use up leftover Christmas ham

If you’ve woken up on Boxing Day staring at a fridge full of leftover ham, roast veg and potatoes — this one’s for you.

This Boxing Day Ham & Veggie Frittata is quick, flexible, and perfect for feeding a crowd (or setting yourself up with easy lunches for the week). No fancy ingredients, no stress — just a solid, no-waste recipe that works every time.

Ingredients

Serves: 8
Prep time: 10 minutes
Cook time: 20 minutes

  • 6 eggs
  • 1 capsicum, diced
  • 1 cup leftover Lucky Pig ham, chopped
  • 1 cup potatoes, cooked and diced (roasted, boiled or leftover chips all work)
  • Handful of button mushrooms, sliced (optional)
  • Pumpkin, cooked and diced (roasted is ideal)
  • Parsley, chopped
  • Salt & pepper
  • Optional: oil or butter for cooking

Method

  1. Preheat your oven to 180°C.
  2. Whisk the eggs in a large bowl and season with salt and pepper.
  3. Add the capsicum, ham, potatoes, mushrooms (if using), pumpkin and parsley. Mix to combine.
  4. Heat a little oil or butter in an oven-safe frying pan over medium heat.
  5. Pour the mixture into the pan and cook for a few minutes until the edges begin to set.
  6. Transfer the pan to the oven and bake for 15–20 minutes, or until just set and lightly golden on top.
  7. Remove from the oven, slice and serve warm — or enjoy cold.

Tips from the butcher

  • This is a true clean-out-the-fridge recipe — swap in zucchini, spinach, onion or leftover roast veg.
  • Perfect for breakfast, lunch or easy meals through the week.
  • Let it cool completely before refrigerating so it sets nicely for slicing.
