An easy way to use up leftover Christmas ham

This Boxing Day Ham & Veggie Frittata is quick, flexible, and perfect for feeding a crowd (or setting yourself up with easy lunches for the week). No fancy ingredients, no stress — just a solid, no-waste recipe that works every time.

Ingredients
Serves: 8
Prep time: 10 minutes
Cook time: 20 minutes
- 6 eggs
- 1 capsicum, diced
- 1 cup leftover Lucky Pig ham, chopped
- 1 cup potatoes, cooked and diced (roasted, boiled or leftover chips all work)
- Handful of button mushrooms, sliced (optional)
- Pumpkin, cooked and diced (roasted is ideal)
- Parsley, chopped
- Salt & pepper
- Optional: oil or butter for cooking

Method
- Preheat your oven to 180°C.
- Whisk the eggs in a large bowl and season with salt and pepper.
- Add the capsicum, ham, potatoes, mushrooms (if using), pumpkin and parsley. Mix to combine.
- Heat a little oil or butter in an oven-safe frying pan over medium heat.
- Pour the mixture into the pan and cook for a few minutes until the edges begin to set.
- Transfer the pan to the oven and bake for 15–20 minutes, or until just set and lightly golden on top.
- Remove from the oven, slice and serve warm — or enjoy cold.

- Let it cool completely before refrigerating so it sets nicely for slicing.
