Ingredients
Serves: Enough to glaze one large ham
Prep time: 10 minutes
Cook time: 10 minutes

1 jar blackberry jam

3–4 strips of orange rind

Whole cloves
-
3 whole star anise
-
1 cinnamon stick
-
½ cup orange juice
-
2 tbsp honey
-
1 tsp mixed spice
-
1 tsp salt
Method

Add blackberry jam to a small saucepan.

Grate or peel strips of orange rind and add to the pan.

Add whole cloves, whole star anise & a cinnamon stick.

Pour in orange juice and add honey, mixed spice & salt.

Place over medium heat and stir gently.

Simmer until the glaze thickens and becomes glossy (around 5–10 mins).

Remove whole spices for a softer flavour — or leave them in for a stronger infusion.


Make Christmas Easy
Once your glaze is ready, simply brush it over your ham and return it to the oven.
