Ingredients:
6 jalapeños
300g streaky bacon from The Lucky Pig
200g Philadelphia cream cheese
½ onion, caramelised
A handful of chopped parsley
2 tbsp maple syrup

Method:

Preheat the grill or oven to medium–high.

Halve the jalapeños lengthways and remove seeds. Lightly grill them cut-side down for a few minutes to soften and add flavour.

In a bowl, mix cream cheese, caramelised onion, and parsley.

Fill each jalapeño half with the mixture, then wrap with a strip of bacon.

Grill or bake until the bacon is nearly crisp.

Brush with maple syrup and continue cooking until caramelised.
Serve warm with an extra drizzle of maple syrup.
